  • 2023-05-15

In recent years, orange juice beverages have gained great popularity. Data shows that although the taste of fruit juice beverages is becoming diversified, the acceptance rate of orange juice among Chinese consumers is still as high as 58%. It can be seen that in the coming years, orange juice will still dominate the fruit juice beverage market. This product is made from imported concentrated orange juice as the main raw material, mixed with sugar, acid, etc. to form an orange juice beverage.

The total amount of beverage is 1000mL.

1. Sol: Mix a small amount of white sugar, suspension agent, potassium sorbate, and sodium citrate dry and evenly, sprinkle them into 300mL, 80 ℃ pure water, stir and heat to fully dissolve, without insoluble particles.

2. Dissolve sugar: Add white granulated sugar and sweet sugar to approximately 200mL of pure water, heat to dissolve and boil for 3 minutes to kill bacteria, then filter with a 300 mesh filter cloth.

3. Acidification: Dilute concentrated orange juice and citric acid with approximately 100mL of purified water at 60 ℃, slowly add to the mixture, and stir evenly.

4. Constant volume and homogenization: Dissolve the color fixative completely with a small amount of warm water, add it to the material and stir evenly. Then, dilute it to 1000mL with 60 ℃ pure water, mix the fragrance and color, and homogenize it under conditions of 60 ℃ and 20MPa. Fill and seal.

5. Sterilization: Pasteurization is used at 85~90 ℃/15~20 minutes.

6. Cooling: Place the sterilized sample in a cold water bath and cool to room temperature to produce the finished product.

[Precautions]

The production water must be softened water, and the conductivity of the production water (25 ℃± 1 ℃) is less than 10 μ S/cm。
